Yes it is technically correct. 'Thank' is a countable noun. So saying 'Many thanks' is right and is a more common form. But if you want to further show gratitude, you can use many 2 times.

Yes it is correct, you can also use "Thanks a lot"; or "Thank you so much" it's more formal than many many thanks.
