in simple present tense we use structure s+V1+o then how are you saying to use am/is/are?

No, your statement is correct, but not fully correct. Because we use "S + v1 + O" in simple present tense as well as "is/am/are". When there is a verb in the given sentence then we write that sentence as " S + v1 + O or do/does" . For ex:- We don't go there everyday. Does she have lunch daily this time? Whereas when there is no verb in the given sentence then we use "is/am/are" in that sentence. Ex:- Are they poor farmers? He is a good student. I am not an engineer.
