 Because have is main verb and helping verb: I have lunch. ( main verb ) I have taken lunch. ( Helping verb ) Here First have is main verb had is helping verb: ex. I have had lunch. Similarly She has taken breakfast. She has had breakfast. I had taken breakfast. I had had taken breakfast. All are correct and can be use like this.
