Hi! basically " are you " is the usage of the verb TO BE and "Do you" is the usage of the auxiliary in questions. When you ask questions just with the verb TO BE (am, is, are) you don't need an auxiliary. You can say: am I tall? Is He tall? are you tall? but when you ask something with another verb ( play, sing, read, etc) You will need the auxiliary. Do You SING? DOES He sing? It happens the same for the negatives: with verb TO BE: I'm not, He is not (isn't'.), you are not( aren't.) but for anotheverbs: I do not SING, You don't SING, He does not SING ( doesn't).

be forms(am, is, are, was, were) never take verb1 form. so when you use be forms, you shouldn't use verbs. ex...is he a doctor? are they students? am i a singer? was she a teacher then ? were they poor in those days? in the above mentioned examples we didn't mention any verb forms we are just talking about the state of the subject. on the other hand, if we want to ask something about verb action we use auxiliary verbs like do, did, does, will, would, shall,etc...other othan "be forms" ex..do you speak English? does she play chess? did you go for a walk? will you go to school tomorrow? in the above mentioned examples we are talking about the action of the verb.
